Family Pizza Night: Fig & Prosciutto Pizza, Pepperoni Pizza Roll

Do you feel like a short-order cook trying to please all your picky eaters? Do you have to dumb-down your taste buds just because you have kids who run screaming from the room when they see food that is green? I feel you, but there is hope. On New Year’s Eve we went to my sister’s house for a Pajama Ping-Pong Tournament. I made a Fig & Prosciutto Pizza for the adults and a Pepperoni Pizza Roll for the kids. The pizzas were a big hit with both young and old. I know you are dying to know if I won the ping-pong tournament. No I didn’t, but I did win the Best Pizza Ever Award and Cutest Pajamas.

Fig & Prosciutto Pizza

What you will need:

Instructions:

1. Preheat oven to 400 degrees.

2. Prepare your pizza crust. For the Fig pizza I used Pillsbury Thin Pizza Crust. Spread some olive oil on your pizza pan or cookie sheet. Roll out the crust on the pan then spread some olive oil on the top of the crust. Pre-bake the pizza crust according to the package directions for 5-6 minutes. Take out of oven.

3. Add a thin layer of fig spread to the crust. Spread with the back of a spoon. It is very sticky. Try to evenly distribute it.

4. Sprinkle fig spread with sea salt.

5. Add thinly sliced fresh mozzarella cheese.

6. Put back into oven for the remaining time 6-11 minutes or until crust begins to brown.

7. Separate the prosciutto slices and add to the pizza in little clumps or nests of yumminess. The warmth of the pizza will warm the prosciutto up.

8. Add handfuls of arugula to the top of the pizza.

9. Top with shaved parmesan, let cool then slice. Enjoy!

Pepperoni Pizza Roll

What you will need:

Instructions:

1. Preheat oven to 400 degrees.

2. Prepare your pizza crust. For the Pepperoni Pizza Roll I used the Pillsbury Artisan Pizza Crust. Spread some olive oil on your pizza pan or cookie sheet. Roll out the crust on the pan then spread some olive oil on top of the crust. Pre-bake the pizza crust according to the package directions for 6-8 minutes. Take out of oven.

3. Add a thin layer of your pizza sauce.

4. Sprinkle grated mozzarella cheese all of the pizza.

5. Add slices of pepperoni.

6. Roll the pizza into a pizza loaf.

7. Put back into oven for the remaining time 8-12 minutes or until crust begins to brown.

8. Let cool a bit then slice. Enjoy!
