Un-fried Ice Cream Balls

Be prepared to fall in love with these crunchy, sweet and totally addicting treats! My kids love these things. What I love is that you can control the portion and no extra sugar is added. You get your sweetness from the ice cream and the un-friend crunch from Total cereal. Enjoy!

What you will need:

Instructions:

Your ice cream needs to be a bit soft. The tricky part is getting all your balls made before your ice cream starts to melt. I had to stop in the middle and put everything back in the freezer for a few minutes to firm-up my ice cream. When I did this, I also put the balls that I’d already made back into the freezer too.  When finished, cover your balls with plastic wrap or in an airtight container and store in the freezer. Makes 24-26 balls.

1. Line a pan with cupcake liners. You could use a muffin pan too.

2. Put the cereal in a large Ziplock bag and start smashing until finely ground into crumbs.

3. Transfer cereal crumbs to a bowl and add cinnamon. Stir well.

4. Using an ice cream scoop, scoop out a small ball of ice cream.

5. Roll the ice cream ball into the cereal crumbs until coated.

6. Place in a cupcake liner.

7. When finished, cover your balls with plastic wrap or in an airtight container and store in the freezer to firm up.

8. When you are ready to serve, pull out of freezer and let stand a few minutes. Garnish with honey or chocolate sauce. Makes 24-26 balls.
