Easy Lemon Kale Chickpea Avocado Salad

I can’t get enough of kale, like the rest of the world. I know it’s a fad, but it is such a yummy and nutritious fad. That being said, I’ve found my new favorite salad from The Kitchen Girl–Easy Lemon Kale Chickpea Avocado Salad! This salad is chock full of nutrients, protein, good oils and a lemony zest to make it more interesting. It is gluten-free and vegan the way it is, but if you want to make it heartier, add some quinoa and grilled chicken to it. Enjoy!

Best salad EVAH! It is chock full of nutrients, protein, good oils and a lemony zest to make it more interesting and super delicious. It is gluten-free and vegan the way it is, but if you want to make it heartier, add some quinoa and grilled chicken to it.

Ingredients
  1. DRESSING
  2. 1/4 cup extra virgin olive oil
  3. 1 lemon (juiced, with pulp)
  4. 1 clove finely grated garlic
  5. 1/4 tsp salt
  6. 1/8 tsp black pepper
  7. SALAD
  8. 1/2 bunch (or 2 cups) finely chopped kale
  9. 1 15 ounce can chickpeas, also called garbanzo beans (drained)
  10. 1 ripe diced avocado
  11. 1/4 cup shelled chopped pistachios (optional)
Instructions
  1. In a medium bowl combine all of your dressing ingredients. Whisk or stir to combine.
  2. Fold in your chopped kale to your dressing. Using your hands, massage the kale for a few minutes until it is coated.
  3. Next, gently fold in the chickpeas, diced avocados and and chopped pistachios (optional). I didn't have pistachios and the salad was still awesome!
  4. Cover and refrigerate until ready to serve.
